I have not skied the new e.SL so I can’t help there. But as for length, I am 6 3” and 180 lbs with disproportionately long legs and a short torso. Every time I get on a 165cm slalom carver they feel way too short and for me 170cm us about as low as I go. Harald is 5 10” and 145 lbs and also prefers the 170 length in slalom carvers vs the 165. Max is 6” 160 and also prefers the 170. I would say from maybe 5 9” down and light might consider the 165. Others can chime in. It also has to do with skill level. Beginner PMTS skiers can go shorter, but again, there are limits and we can make a clear case at my height and weight that I should never be on a 165 in a recreational slalom ski (FIS race skis are stiffer and 165 is as big as they go).
Balance: Essential in skiing and in life!
