Grinding is the word used to describe a racer with too much grip/friction on the edges. Harald covers this on pages iv and v of Essentials. Imagine being so good with the Essentials that you produce too much edge friction so you aren't going as fast as needed when carving a steep icy pitch. This is an advanced topic that really only applies to high level racers and coaches.

Gliding with just enough edge hold, and edge hold without impeding gliding, are the secrets to winning race runs.

I think I was confused about having a hard edge set vs. grinding which apparently is sort of a shuffling of the ski back and forth to dig the edge in more. To me it looked like she was getting too much horizontal separation as she was setting her edges. I think the grinding motion is too subtle for me to see.
