demo bindings

Hello,
I had ordered a set of brand new twintips from a rep. But once he got my check and cashed it, he wrote and said that he'd made a mistake and didn't have any of them in stock but would offer me a set of the same skis, but a Spring demo pair, like new, with Marker demo bindings for the same price.
Aside from my wondering if he had the skis in the first place, I would like to know if demo bindings are as safe and have the same performance as a stock binding, and should I take the deal or ask for my money back. I won't find the skis at this price anywhere else though, most likely.
I'm disappointed, but the demos may be just as good, plus the binding is already there.
I also know most people put the binding on the flat ski with no riser for twintips, and I don't know if the Marker demo is on a riser.
Can they be removed and the toe and heel put on like regular, or does that mean too many holes in the ski and the performance is compromised.
I'm not sure which way to go here.
